Native Australian Jon-Antony attended Regency College Culinary school in Adelaide, Australia, where he studied for 4 years. While in Chicago Jon-Antony has been featured on CLTV, ABC-7, and Fox News in the MORNING, Hungry Hound, WGN-TV, Chicago Sun Times, Chicago Tribune, WWD Chicago, Chicago Magazine and The Reader. He was also invited by the Art Institute of Chicago to guest lecture a class on his Food Fashion Show. He was teaching cooking classes in culinary venues around the U.S.A.for about 6 years and helped open Table Fifty Two (Art Smith’s restaurant). He is currently working on his first Cook Book “My Life In America” One of Jon-Antony Recipes was featured on the “Martha Stewart Show” Feb 14th 08 He has Cooked with and Food Styled for such clients as: Abigail Johnson Doge, Michael Schlow, Nick Malgieri, Ted Allen, Art Smith, Gwyneth Paltrow, Oprah Winfrey, Giada de Laurentiis, Rachel Ray, Cyndi Lauper, Rocco Dispirito, Mayor Dayley, Padma Lakshmi, Eric Rupert, had a recipe featured on the Martha Stewart show and recently dessert for Paula Deen and John Ledgend. It was great, I really enjoyed  my last US Xmas and looking forward to the start of a new year.

Xmas day and OLE'

So i had a great Xmas day and enjoyed the company of some great friends, cook a great dinner ala Julia Child and it was a great hit......


then had to hear some slander being spread the next day about me from that women who owns the rest that i stupidly got involved with.


I cant belive THAT this women thinks she can get away with hiring some one and telling them that she is paying $750/week, was told pay day was every tuesday... after 3 pay days only reciving a total of $260 said that i needed to be paid so i could pay my rent and bills! To this i was told she could not afford me if i wanted to get paid (not only is this breaking the law letting someone go once they demand pay) its moraly wrong and now i find that after i it took me another week to get my money and be put out of work for doing my job and trying to work with the second class produce that she buys and serves her customers i find out she is talking bad about me to people!


Well best you STOP !!!!  I will take this further and having your people at the seafood company call me and yell obsenities over the phone wont work we me either.

She has started negoations to do right thing so im told....but talking bad about someone that tried to help you get your rest back in shape is pretty shitty!

4 Days to go....

Happy Holidays To all....

Well its been a rough trip this year and i dont regret any of it, Ive opened some new doors and closed others. With the return to Aus in May next year im gearing up to do 2 events for Australia Day.

The 1st a Demo Cooking Class at Fox and Obel.... Jan 19th 2010 (date to be confirmed) with a menu of my favourite things.

The 2nd my Australian Supper Club Dinner ...... Jan 25th 2010 (tickets will go on sale January 5th-15th) the menus will be online tomorrow.

As allways I cant make these events a success with out your support so when they are up online please help me get the word out and forward my web page.

A New Day

Well i revised my angry blog from yesterdayafternoon.....late last night, for those few that read it I still feel that way. I cant belive that people think they can take advantage of people and tell you that if you want to get paid you will be let go. (Enough about ole for now on on too the other one....)

Don't support peole like this..... or people that think its okat to cut your wages by 25% as the chopping block did december 15th last xmas. (I was an idiot to stay there so long but she planned it well "get them when there are no jobs around and they'll be trapped". I even heard a roumor that she was talking about staff to other prospective employeers cause i was not the only one try to get the hell out of their. Ilediglly......) I took a job that i thought was going to be good for my career(even after i had been warned by others that said she was a bitch and not to do it but i was persuaded by a good friend that knew her through other avenues and i have trusted his advice for the last 6 years. Well i was promised full time! never got it...Had to sign a noncompete clause which i was fine with but not when you take 25% of my pay (you cow) then had 2 of the most useless bitch managers that gave everybody else their work and sat in front of a compuiter all day but never managed to check email...lol what the hell did they do????? Oh and lets not forget HEALTH INSURENCE yes i was told after 90 days i would get this but when i applied for it i was told because i would not make my self advaidable 6 days a week i was not able to get it...(sorry for expecting 2 days off a week) then when you get sick they give you shit cause you call in.(Hey assholes sorry i dont book inadvance when im going to be sick i guess your a little more special...yer right!!!!) Where did you train...Oh thats right you learnt from who!!!!

Any way im going to have some coffee, Oh just got off the phone with ROC and CRUPLS oh its going to be a bumpy Xmas for some.........

A new arrival for Xmas

Im happy to say my sister Amy had her first baby last night, Colby Michael was born @ 9.45 pm in Australia @ Flinders Medical Center weighing in at 6lb 8oz. Im told Mum and baby are doing well and cant wait to see pic's of my little nephew...... Im now an Uncle! 

And not to forget the Savanna Xmas party was great last night!  Met some wonderful people and all seemed to love the food. Thanks Savanna I had a great time and now I have a little nephew as well :) I will post a couple of the recipes from the party soon. If you want any other's feel free to email me.

Savanna Xmas Party

Hey so im posting alot today I know just so much going on, im out of town and away from the resturant hope its goinng well ifanyone has gone in let me know how its been. So after 2 days prep we are finally at the day of the Xmas Party and so far all is well im right on track with the food and taking a few minutes to blog real quick. there is going to be i think about 75 people and think we have plently of food, i will take some pics and post them tomorrow. Well keep checking things out cause im going to get back on track with the blog and expand it a little so it might get a little saucy in here lol ive come up with a new segment that im naming "the ugly truth" yes after the movie it inspired me to tell it a little more like I see it.....

Dinner at Bombfire Pizza

Hey All,

Well if you dont know im in Savanna, IL helping my friends Eric and Allen do the food for their Xmas Party this evening. Last night wehad a chance to duck out for wood fire pizza (think of me yelling that in that anoying "opraha style voice") LOL..... well it was great met the owner Tom and he showed me around their cool kitchen and the wood buring oven! Now keep in mind this is only wood heating up this oven its was so cool, not like the one at Table 52 (not putting the oven down at all) which was both gas and wood this baby runs on wood alone we had crab stuffedmushrooms to start then followed by two pizza's the first was bbq chicken my fav! and then a pepperoni and mushroo, both were great and you could realy get the flav of the wood oven. We might be heading back there Sunday to help him work out some bread stuff, so if you are ever in the hood you gotta check it out.

In Home Cooking Classes

Hello all,

Im happy to anounce the launch of my....


In Home Cooking Classes:

I will come to your home and Instruct you and 7 of your guests (8 minimun) on how to cook some of my favorite menu combinations from $65.00/person Included an Appitiser, Main Course, Side and Dessert (food Included and can bring aditional equipment if necessary for up chagre) or we can design a menu just for you and your guests and even help with wine paring for your menu. Some of the classes I've designed are below and for more info ask for a In Home Cooking Class packet to be emailed to you. 

I'll set up 1 hour before cook off time instruct you through your evening (aprox 2 hours) and clean up while you enjoy your dinner. My classes are designed as hands on-demo or demo only and will be designed to work in your space.

the Goss

Hello all,

Its been a few days but finally back been working on a Cali-Oz Holiday Menu for a friend and I will post it on here sometime soon, My favorite cook store is closing one of its locations Sur La Table on walton street will be closing on Dec 31st Go visit and say hello to Joy the Assistant Manager, this is where my teaching career began I"ll miss it. Planiing on going and taking some pics maybe i'll see you there.

The Goss

Okay so i've been thinking over this very hard, and i've decided that if things dont pick up for me on the chefing trail by the end of Febuary I am most likly heading back home to my family in Australia to Live. If you have any advice or help let me know. I will keep you posted and if i do leave i will be having a big party to say Farwell to you all. But till then keep watchin my blog....

The Dish

Saltana Scones

1 1/4 pounds self rising flour
1 stick of unsalted butter
1/3 cup white granulated sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/2 cup chopped saltanas (golden rasins)
1 cup whipping cream
1 cup whole milk

Rub butter into the self rising flour, then add sugar, salt and cinnamon. Fold in Saltanas the cream and milk.
Using and ice cream scoop, scoop balls of the dough and place on parchment lined sheet trays brush tops
 with a little cream and sprinkle with sugar and bake in preheated oven at 400 degrees and bake for 15-20 minutes.
Eat warm with whipped cream and your favorite jam.

The Class

Thanks to the ladies of Pampered Chef, we had a Iorn Chef cook off today and they were all a treat to have in the kitchen, and i loved the Southwestern Spice and the Chipotle Rub. Ladies as promised im working on your recipes Including the scones and will post them very soon.

The Dish

 
 
 
Macadamia Nut Crusted Barramundi Fillets

1 lb fish fillet (Fresh or Frozen)
2 tablespoons Yellingbo Olive Oil
1 teaspoon lime zest
1 tablespoon chopped parsley
2 cloves finely minced garlic
1 cup of chopped macadamia nuts
1 teaspoon salt
1/2 teaspoon pepper
4-5 cedar pappers soaked in cold water

Slice fish into strips about 1 inch wide and the full width of the fillet.  On your cedar planks place a little olive oil then the barra fillet, in a small mixing bowl place chopped mac nuts, lime zest, garlic and parsley. Mix and top with some of the mac mix and then roll up cedar papers and tie. Place on a hot grill and cook for two minutes. Turn and cook one or two more minutes. Serve wrapped with a little salad on the side.

The Plate

Noodle Zone...on clark street in andersonville is off my list for good. I've given the noodle zone many, many chances and tonight was the last i ordered a green chicken curry probally one of the easiest things to make in asian cooking and it was terrible, actually it sucked probally one of the worst asian meals ive eaten in my 20 year's as a chef, they even have asian cooks in the kitchen!

Avoid this place if you like food.
